Ingredients
- 1 pound (450 g) cheese tortellini
- 1 cup (150 g) cherry tomatoes, halved
- 1 cup (150 g) cucumber, diced
- 1/2 cup (75 g) red bell pepper, diced
- 1/4 cup (30 g) red onion, finely chopped
- 1/4 cup (30 g) black olives, sliced
- 1/2 cup (75 g) mozzarella pearls
- 1/4 cup (4 g) fresh basil, chopped
- 1/4 cup (60 ml) olive oil
- 2 tablespoon s (30 ml) lemon juice
- 1 tablespoon (15 ml) red vinegar
- 1 clove garlic, minced
- Salt, to taste
- Black pepper, to taste
Instructions
- Boil a large pot of salted water.
- Cook the tortellini according to package instructions.
- Drain the tortellini and rinse with cold water.
- In a large bowl, combine cherry tomatoes, cucumber, and red bell pepper.
- Add red onion, black olives, and mozzarella pearls to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, and red vinegar.
- Stir in minced garlic, salt, and black pepper to the dressing.
- Pour the dressing over the salad ingredients.
- Toss the salad gently to combine.
- Add the cooled tortellini to the salad.
- Toss again to coat the tortellini with dressing.
- Sprinkle chopped fresh basil over the salad.
- Chill the salad in the refrigerator for at least 30 minutes.
- Adjust seasoning with salt and pepper before serving.
