Ingredients

  • 1 pound (450 g) cheese tortellini
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (150 g) cucumber, diced
  • 1/2 cup (75 g) red bell pepper, diced
  • 1/4 cup (30 g) red onion, finely chopped
  • 1/4 cup (30 g) black olives, sliced
  • 1/2 cup (75 g) mozzarella pearls
  • 1/4 cup (4 g) fresh basil, chopped
  • 1/4 cup (60 ml) olive oil
  • 2 tablespoon s (30 ml) lemon juice
  • 1 tablespoon (15 ml) red vinegar
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Boil a large pot of salted water.
  2. Cook the tortellini according to package instructions.
  3. Drain the tortellini and rinse with cold water.
  4. In a large bowl, combine cherry tomatoes, cucumber, and red bell pepper.
  5. Add red onion, black olives, and mozzarella pearls to the bowl.
  6. In a small bowl, whisk together olive oil, lemon juice, and red vinegar.
  7. Stir in minced garlic, salt, and black pepper to the dressing.
  8. Pour the dressing over the salad ingredients.
  9. Toss the salad gently to combine.
  10. Add the cooled tortellini to the salad.
  11. Toss again to coat the tortellini with dressing.
  12. Sprinkle chopped fresh basil over the salad.
  13. Chill the salad in the refrigerator for at least 30 minutes.
  14. Adjust seasoning with salt and pepper before serving.
