Ingredients
- 2 cups bell peppers (various colors), cut into chunks
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes
- 1 cup red onion, cut into chunks
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, whisk together olive oil, soy sauce, lemon juice, garlic, oregano, paprika, salt, and pepper to create the marinade.
- Add the vegetables to the bowl and toss to coat them in the marinade.
- Let the veggies marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated vegetables onto skewers.
- Grill the kabobs for about 10-12 minutes, turning occasionally, until the veggies are tender and slightly charred.
- Remove from the grill and serve hot.
