Delicious shrimp tacos marinated in lime and cilantro, topped with creamy slaw for a refreshing and flavorful meal.
Ingredients
- 1 lb shrimp (peeled and deveined)
- 1/4 cup fresh cilantro (chopped)
- 2 tbsp lime juice (freshly squeezed)
- 8 small corn or flour tortillas
- 2 cups cabbage (shredded)
- 1/2 cup mayonnaise
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Marinate the shrimp with lime juice, cilantro, chili powder, cumin, salt, and pepper for at least 15 minutes.
- Prepare the slaw by mixing shredded cabbage with mayonnaise, lime juice, salt, and pepper.
- Heat oil in a skillet and cook the marinated shrimp for 3-4 minutes until pink and opaque.
- Warm the tortillas until pliable.
- Assemble the tacos with shrimp on each tortilla and top with creamy slaw. Garnish with extra cilantro if desired.
- Serve immediately with lime wedges.
Notes
For additional flavor, consider adding extra lime juice to your slaw or jalapeños for a kick.
