Ingredients
- 2 white fish fillets (e.g., cod or haddock)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup kalamata olives, pitted and chopped
- 2 tablespoons capers, rinsed
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the diced tomatoes, olives, capers, and red pepper flakes. Simmer for about 10 minutes.
- Season the white fish fillets with salt and pepper, then place them in the skillet with the sauce.
