Ingredients
- 4 pounds (1.8 kg) large shrimp, shell on
- 2 pounds (900 g) crab legs
- 2 pounds (900 g) clams
- 2 pounds (900 g) mussels
- 2 pounds (900 g) baby potatoes
- 4 ears corn, cut into thirds
- 1 pound (450 g) smoked turkey sausage, sliced
- 1/4 cup (30 g) Szechuan peppercorns
- 1/2 cup (115 g) unsalted butter
- 2 lemons, halved
- 2 limes, halved
- 1 tablespoon (15 g) paprika
- 1 tablespoon (15 g) cayenne pepper
- 1 tablespoon (15 g) garlic powder
- 1 tablespoon (15 g) onion powder
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Fill a large pot with water and bring to a boil over high heat.
- Add the Szechuan peppercorns, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper to the boiling water.
- Add the baby potatoes to the pot and cook for 10 minutes.
- Add the corn and smoked turkey sausage to the pot and cook for an additional 5 minutes.
- Add the crab legs, clams, and mussels to the pot and cook for 5 minutes.
- Add the shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes.
- While the seafood boils, melt the unsalted butter in a small saucepan over medium heat.
- Squeeze the juice from the lemon and lime halves into the melted butter.
- Place the squeezed lemon and lime halves in a hot skillet and char them slightly, then add to the butter.
- Remove the seafood, sausage, corn, and potatoes from the pot and drain well.
- Arrange the boiled ingredients on a large serving platter or table covered with parchment paper.
- Pour the charred citrus butter over the seafood boil.
- Garnish with chopped fresh parsley before serving.
