Ingredients
- 1/4 c Butter
- 1 clove Garlic, minced
- 1 1/2 c Heavy cream Whipping cream in Canada
- 1 1/2 c Parmesan, finely grated
- 1/2 teaspoon (3 ml) Fresh finely ground pepper
- 2 tablespoon (30 ml) Lemon juice
- 2 containers Sardo Marinated Seafood Salad or Shrimp, drained (alternatively use 1.5 c prepared mixed seafood)
- 4 c Cooked fettuccini or other long pasta, cooked, 1/2 c water reserved
- 1/2 c Parsley, roughly chopped plus more for garnish
- Salt and pepper to taste
Instructions
- Melt the butter in a large pot over a gentle flame.
- Introduce the minced garlic and sauté lightly until it releases its aroma, then pour in the cream, sprinkle the finely grated parmesan, and add the freshly ground pepper. Increase the heat to medium, allowing it to cook until it begins to slightly thicken.
- Incorporate the lemon juice and let it simmer for an additional 2 minutes.
- Lower the heat and gently fold in the cooked pasta, drained seafood, and chopped parsley. Stir carefully until everything is evenly heated, tasting and adjusting the salt if needed.
- If the mixture thickens too much, gradually stir in a bit of the reserved pasta water until you reach the preferred texture.
- Serve immediately in bowls that have been warmed beforehand. Top with fresh parsley, additional grated parmesan, and a sprinkle of ground pepper for a simple garnish.
