Ingredients

  • 6 salmon fillets (4-5 oz (128 g) each, skin can be off or on)
  • Salt and pepper
  • 1 tbsp olive oil (15 ml)
  • 1 tbsp (15 ml) vegetable oil
  • 1/2 cup minced onion (120 g)
  • 3 cloves garlic minced
  • 1 cup coconut cream (240 ml, half and half)
  • 1 tbsp (15 ml) Italian seasoning or oregano
  • 1/4 cup (60 ml) vegan parmesan cheese (grated)


Instructions

  1. Sprinkle the salmon fillets with salt and pepper to taste. Warm up the olive oil in a large, sturdy skillet. Place the salmon in the skillet and sear each side for 3-4 minutes. Avoid cooking the salmon completely during this step.
  2. Take the salmon out of the skillet and introduce the vegetable oil. Add the minced onion and sauté for 2-3 minutes until they turn golden and soften, then mix in the minced garlic and cook for 30 seconds.
  3. Pour in the coconut cream, along with the Italian seasoning or oregano, and the grated vegan parmesan cheese. Stir everything together and let it simmer for about a minute.
  4. Switch off the heat and place the salmon back into the skillet. The remaining heat will finish cooking the fish.
  5. Ladle the sauce over the salmon, and if you like, add a splash of lemon juice. Serve it alongside pasta or vegetables.

  • For added richness, use skin-on salmon fillets for enhanced texture and flavor.
  • Adjust the seasoning with more Italian seasoning or oregano to suit your taste preference.
  • To make the sauce creamier, add a splash of coconut milk or extra coconut cream.
