Ingredients
- 6 salmon fillets (4-5 oz (128 g) each, skin can be off or on)
- Salt and pepper
- 1 tbsp olive oil (15 ml)
- 1 tbsp (15 ml) vegetable oil
- 1/2 cup minced onion (120 g)
- 3 cloves garlic minced
- 1 cup coconut cream (240 ml, half and half)
- 1 tbsp (15 ml) Italian seasoning or oregano
- 1/4 cup (60 ml) vegan parmesan cheese (grated)
Instructions
- Sprinkle the salmon fillets with salt and pepper to taste. Warm up the olive oil in a large, sturdy skillet. Place the salmon in the skillet and sear each side for 3-4 minutes. Avoid cooking the salmon completely during this step.
- Take the salmon out of the skillet and introduce the vegetable oil. Add the minced onion and sauté for 2-3 minutes until they turn golden and soften, then mix in the minced garlic and cook for 30 seconds.
- Pour in the coconut cream, along with the Italian seasoning or oregano, and the grated vegan parmesan cheese. Stir everything together and let it simmer for about a minute.
- Switch off the heat and place the salmon back into the skillet. The remaining heat will finish cooking the fish.
- Ladle the sauce over the salmon, and if you like, add a splash of lemon juice. Serve it alongside pasta or vegetables.

- For added richness, use skin-on salmon fillets for enhanced texture and flavor.
