Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 4 cloves garlic, minced
  • 1 cup (240 ml) heavy cream (240 milliliters)
  • 1/2 cup (120 ml) chicken broth (120 milliliters)
  • 1/2 cup (120 ml) grated Parmesan cheese (45 grams)
  • 1 teaspoon (5 ml) Italian seasoning
  • Salt and pepper to taste
  • 2 cups (480 ml) fresh spinach leaves (60 grams)
  • 1/2 cup (120 ml) sun-dried tomatoes, chopped (70 grams)
  • 1 cup (240 ml) artichoke hearts, quartered (150 grams)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • 1/4 cup (60 ml) fresh basil, chopped (10 grams)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add shrimp to the skillet and season with salt and pepper.
  3. Cook shrimp for 2-3 minutes on each side until pink and opaque.
  4. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add the remaining 1 tablespoon of olive oil.
  6. Add minced garlic and sauté for 1 minute until fragrant.
  7. Pour in the heavy cream and chicken broth, stirring to combine.
  8. Add grated Parmesan cheese and Italian seasoning to the skillet.
  9. Stir continuously until the cheese has melted and the sauce is smooth.
  10. Add salt and pepper to taste, adjusting as needed.
  11. Stir in the fresh spinach leaves, allowing them to wilt slightly.
  12. Add the chopped sun-dried tomatoes and quartered artichoke hearts.
  13. Return the shrimp to the skillet, mixing them with the sauce and vegetables.
  14. Drizzle the lemon juice over the entire mixture.
  15. Cook for an additional 2-3 minutes to heat everything through.
  16. Sprinkle the chopped fresh basil over the top before serving.
  17. Serve immediately, pairing with pasta or rice if desired.
