Ingredients

  • 1/2 teaspoon (3 ml) Italian seasoning (thyme, basil, oregano, rosemary)
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) coarse black pepper
  • 5 cloves garlic, minced
  • 2 tablespoons (30 ml) olive oil
  • 113 g sun-dried tomatoes, chopped (about 60 ml)
  • 397 g artichoke hearts, drained and chopped (1 can or about 240 ml)
  • 113 g fresh spinach
  • 240 ml heavy cream
  • 1/4 teaspoon (1 ml) smoked paprika
  • Salt, to taste


Instructions

  1. This dish requires 454 g of large raw shrimp, peeled and deveined, typically 16 or 20 per package. Coat the shrimp with smoked paprika, Italian seasoning blend, salt, and coarse black pepper.
  2. Warm 2 tablespoons of olive oil over medium-high heat in a large pan until it’s hot. Add the shrimp and minced garlic, cooking for around 2 minutes on each side.
  3. Ensure the shrimp aren’t crowded to prevent steaming; you may need to cook them in batches. Once done, remove them from the heat and transfer the shrimp to a separate plate.
  4. In the same pan, now emptied, introduce the chopped sun-dried tomatoes and diced artichokes. Stir and cook for 1 minute over medium heat.
  5. Introduce the fresh spinach to the pan. Cook on medium heat until the spinach is wilted, which should take a few minutes.
  6. Pour 240 ml of heavy cream and 1/4 teaspoon of smoked paprika into the pan with the vegetables, bringing it to a gentle simmer. Let it simmer for about a minute, stirring continuously. Add salt to taste, and more paprika if desired.
  7. Return the cooked shrimp to the pan, immersing them in the creamy sauce.
  8. Ladle the sauce over the shrimp, allowing it to simmer for about 2 more minutes, or until the shrimp are thoroughly heated and fully cooked.
  9. Taste and adjust salt if necessary.
