Description

A comforting and hearty seafood dish featuring succulent shrimp, vibrant spinach, and flavorful artichokes in a creamy sauce.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 1 can artichoke hearts, drained and chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Parmesan cheese, for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add garlic and sauté for one minute until fragrant.
  3. Add shrimp and cook until pink, about 2-3 minutes.
  4. Stir in spinach, artichokes, and sun-dried tomatoes, cooking for another 2-3 minutes.
  5. Pour in heavy cream and add Italian seasoning, salt, and pepper. Simmer for about five minutes until the sauce thickens.
  6. Serve topped with freshly grated Parmesan cheese.

Notes

For added freshness, consider squeezing lemon juice over the dish before serving. This can enhance the flavors and provide a refreshing contrast to the cream.
