Ingredients
- Salmon fillets
- Olive oil
- Minced garlic
- Fresh spinach
- Cherry tomatoes, halved
- Chicken broth
- Italian seasoning
- Grated Parmesan cheese
- Whole wheat or high-protein pasta
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté for about 1 minute.
- Place salmon fillets in the skillet and cook for 4-5 minutes on each side, or until cooked through.
- Remove salmon and set aside.
- In the same skillet, add spinach and cherry tomatoes, cooking until spinach wilts.
- Pour in chicken broth and add Italian seasoning, letting it simmer for 2-3 minutes.
- Stir in Parmesan cheese until melted.
- Return salmon to the skillet, spooning the sauce over the top.
- Serve over cooked whole wheat or high-protein pasta, or with a side of vegetables.
Notes
For best results, preheat the skillet before adding olive oil. Allow the salmon to rest for a few minutes after cooking.
