Description

A delightful Tuscan salmon dish featuring fresh ingredients and simple techniques to bring Mediterranean warmth to your kitchen.


Ingredients

  • Salmon fillets
  • Olive oil
  • Minced garlic
  • Fresh spinach
  • Cherry tomatoes, halved
  • Chicken broth
  • Italian seasoning
  • Grated Parmesan cheese
  • Whole wheat or high-protein pasta
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute.
  3. Place salmon fillets in the skillet and cook for 4-5 minutes on each side, or until cooked through.
  4. Remove salmon and set aside.
  5. In the same skillet, add spinach and cherry tomatoes, cooking until spinach wilts.
  6. Pour in chicken broth and add Italian seasoning, letting it simmer for 2-3 minutes.
  7. Stir in Parmesan cheese until melted.
  8. Return salmon to the skillet, spooning the sauce over the top.
  9. Serve over cooked whole wheat or high-protein pasta, or with a side of vegetables.

Notes

For best results, preheat the skillet before adding olive oil. Allow the salmon to rest for a few minutes after cooking.
