Ingredients

  • – 1 tbsp (15 ml) vegetable oil
  • – 4 pieces beef fillet
  • – salt and pepper
  • – 2 cloves garlic
  • – 3-4 sun-dried tomatoes, sliced
  • – 125 ml (1/2 cup) fruit juice (e.g., apple or grape)
  • – 250 ml (1 cup) heavy cream
  • – 50g (1/2 cup) grated alternative cheese
  • – 30g (1 cup) fresh spinach


Instructions

  1. Use a paper towel to thoroughly dry the beef fillets to eliminate any extra moisture. Sprinkle salt and pepper on the fillets, then warm the vegetable oil in a skillet over medium-high heat and brown the beef until it achieves a golden color and a crispy exterior. This should take around 6-7 minutes. The beef does not need to be completely cooked at this stage. Set the beef aside on a plate for later use.
  2. In the same skillet, add minced garlic and the sliced sun-dried tomatoes, cooking them gently for approximately 30 seconds on very low heat. Pour in the fruit juice to deglaze the pan and allow it to simmer for about 5 minutes until the liquid reduces by half.
  3. Pour in the heavy cream and sprinkle the grated alternative cheese, stirring until the cheese melts into the sauce. Add the fresh spinach and return the beef to the skillet, letting the sauce simmer on low heat for 5 minutes. Adjust the seasoning of the sauce with salt according to your taste.
