Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the salmon fillets with salt and pepper, and place them in the skillet. Cook for 4-5 minutes on each side until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the garlic and sauté for 1 minute.
- Add the cherry tomatoes and cook until they begin to soften, about 3-4 minutes.
- Stir in the heavy cream and bring to a simmer.
- Add the Parmesan cheese and basil, and mix well until the cheese melts and the sauce becomes creamy.
- Return the salmon to the skillet and coat with the sauce.
