A delightful Tuscan salmon pasta dish combining rich flavors with fresh ingredients, perfect for busy weeknights and special occasions.
Ingredients
- 8 ounces of pasta (linguine or fettuccine)
- 1 pound of salmon fillets
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 pint of cherry tomatoes, halved
- 2 cups of fresh spinach
- Salt and pepper, to taste
- Fresh basil for garnish
- Grated Parmesan cheese for serving
Instructions
- Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper. Cook salmon in the skillet for 4-5 minutes on each side until cooked through. Remove and set aside.
- Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Add cherry tomatoes and cook down for about 5 minutes until softened.
- Add spinach to the skillet, stirring until wilted. Flake cooked salmon and mix with the tomatoes and spinach.
- Combine drained pasta with the salmon mixture. Toss gently to coat. Serve warm, garnished with fresh basil and grated Parmesan cheese.
Notes
For added depth, consider using lemon zest and a pinch of red pepper flakes for a bit of heat. Always taste before serving to adjust seasoning.
