Description

A delightful Tuscan salmon pasta dish combining rich flavors with fresh ingredients, perfect for busy weeknights and special occasions.


Ingredients

  • 8 ounces of pasta (linguine or fettuccine)
  • 1 pound of salmon fillets
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 pint of cherry tomatoes, halved
  • 2 cups of fresh spinach
  • Salt and pepper, to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving


Instructions

  1. Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper. Cook salmon in the skillet for 4-5 minutes on each side until cooked through. Remove and set aside.
  3. Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Add cherry tomatoes and cook down for about 5 minutes until softened.
  4. Add spinach to the skillet, stirring until wilted. Flake cooked salmon and mix with the tomatoes and spinach.
  5. Combine drained pasta with the salmon mixture. Toss gently to coat. Serve warm, garnished with fresh basil and grated Parmesan cheese.

Notes

For added depth, consider using lemon zest and a pinch of red pepper flakes for a bit of heat. Always taste before serving to adjust seasoning.
