Description

Delicious salmon fillets seared to perfection and enveloped in a rich Parmesan cream sauce, enhanced with vibrant sun-dried tomatoes and fresh spinach.


Ingredients

  • 2 salmon fillets
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper, and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the sun-dried tomatoes and cook for an additional minute.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  5. Add the fresh spinach and cook until wilted.
  6. Return the salmon to the skillet, spoon the sauce over the top, and cook for another minute to heat through.
  7. Serve immediately with lemon wedges.

Notes

For best results, use salmon fillets with skin. Experiment with different vegetables to suit your taste.
