Delicious salmon fillets seared to perfection and enveloped in a rich Parmesan cream sauce, enhanced with vibrant sun-dried tomatoes and fresh spinach.
Ingredients
- 2 salmon fillets
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper, and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the sun-dried tomatoes and cook for an additional minute.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
- Add the fresh spinach and cook until wilted.
- Return the salmon to the skillet, spoon the sauce over the top, and cook for another minute to heat through.
- Serve immediately with lemon wedges.
Notes
For best results, use salmon fillets with skin. Experiment with different vegetables to suit your taste.
