Description

A delightful salad combining tender tuna and hearty white beans, enhanced by sun-dried tomatoes and fresh herbs. Perfect for lunch or a light dinner, this dish balances nutrition and taste.

Ingredients

  • 1 can of tuna in olive oil
  • 1 can of white beans
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh Italian parsley, chopped
  • 1/4 cup red onions, diced
  • 3 tablespoons olive oil
  • 1 tablespoon vinegar
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Drain the tuna and the white beans.
  2. In a large bowl, combine the tuna, white beans, chopped sun-dried tomatoes, chopped parsley, and diced red onions.
  3. In a small bowl, whisk together olive oil, vinegar, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the salad and toss gently to combine.
  5. Serve chilled or at room temperature.

Notes

Let the salad sit for at least 30 minutes in the fridge to allow flavors to meld. Serve with lemon wedges for garnish.
