Ingredients
- 1 pound large shrimp, peeled and deveined
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1 cup shredded coconut
- Salt and pepper to taste
- Oil for frying
Instructions
- Season the flour with salt and pepper.
- Dredge each shrimp in the seasoned flour, ensuring an even coat.
- Dip the floured shrimp into the beaten eggs, allowing excess to drip off.
- Press the shrimp into the panko and coconut mixture for an ample coating.
- Heat the oil in your frying pan or deep fryer to 350°F (175°C).
- Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side.
- Remove the shrimp and place on paper towels to drain excess oil.
