Ingredients
- 3 sea bass fillets (about 170 grams each)
- 30 ml olive oil
- 57 grams vegetable oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt, to taste
- Black pepper, to taste
- 15 ml fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the sea bass fillets dry with paper towels.
- Season both sides of the fillets with salt and black pepper.
- Heat a large ovenproof skillet over medium heat.
- Add 2 tablespoons of olive oil to the skillet.
- Once the oil is hot, place the sea bass fillets skin-side down in the skillet.
- Sear the fillets for 3-4 minutes until the skin is crispy.
- Flip the fillets and sear the other side for 2 minutes.
- Transfer the skillet to the preheated oven.
- Bake the fillets for 5-7 minutes until cooked through.
- While the fish bakes, melt 1/4 cup of butter in a small saucepan over medium heat.
- Add the minced garlic to the melted butter.
- Cook the garlic for 1-2 minutes until fragrant and lightly golden.
- Stir in the lemon juice and lemon zest into the garlic butter.
- Remove the skillet from the oven once the fish is cooked.
- Spoon the garlic lemon butter sauce over the baked sea bass fillets.
- Sprinkle the chopped fresh parsley over the fillets.
- Serve immediately with lemon wedges on the side.
