Ingredients

  • 3 sea bass fillets (about 170 grams each)
  • 30 ml olive oil
  • 57 grams vegetable oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt, to taste
  • Black pepper, to taste
  • 15 ml fresh parsley, chopped
  • Lemon wedges, for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the sea bass fillets dry with paper towels.
  3. Season both sides of the fillets with salt and black pepper.
  4. Heat a large ovenproof skillet over medium heat.
  5. Add 2 tablespoons of olive oil to the skillet.
  6. Once the oil is hot, place the sea bass fillets skin-side down in the skillet.
  7. Sear the fillets for 3-4 minutes until the skin is crispy.
  8. Flip the fillets and sear the other side for 2 minutes.
  9. Transfer the skillet to the preheated oven.
  10. Bake the fillets for 5-7 minutes until cooked through.
  11. While the fish bakes, melt 1/4 cup of butter in a small saucepan over medium heat.
  12. Add the minced garlic to the melted butter.
  13. Cook the garlic for 1-2 minutes until fragrant and lightly golden.
  14. Stir in the lemon juice and lemon zest into the garlic butter.
  15. Remove the skillet from the oven once the fish is cooked.
  16. Spoon the garlic lemon butter sauce over the baked sea bass fillets.
  17. Sprinkle the chopped fresh parsley over the fillets.
  18. Serve immediately with lemon wedges on the side.
