Description

A comforting and flavorful Thai shrimp soup made with fresh shrimp, coconut milk, and aromatic spices.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can coconut milk
  • 1/4 cup lime juice
  • 2 tbsp fish sauce
  • 4 cups chicken broth
  • 1 tbsp ginger, finely chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/4 cup cilantro, chopped
  • 1-2 red chili peppers, sliced


Instructions

  1. Heat the chicken broth in a pot and bring to a simmer.
  2. Add chopped ginger and garlic, cooking for a few minutes until fragrant.
  3. Stir in coconut milk, fish sauce, and lime juice. Mix well.
  4. Add sliced mushrooms and shrimp to the pot, cooking until shrimp is pink and cooked through.
  5. Taste and adjust seasoning as needed.
  6. Serve hot, garnished with cilantro and red chili pepper.
