A comforting and flavorful Thai shrimp soup made with fresh shrimp, coconut milk, and aromatic spices.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 can coconut milk
- 1/4 cup lime juice
- 2 tbsp fish sauce
- 4 cups chicken broth
- 1 tbsp ginger, finely chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1/4 cup cilantro, chopped
- 1-2 red chili peppers, sliced
Instructions
- Heat the chicken broth in a pot and bring to a simmer.
- Add chopped ginger and garlic, cooking for a few minutes until fragrant.
- Stir in coconut milk, fish sauce, and lime juice. Mix well.
- Add sliced mushrooms and shrimp to the pot, cooking until shrimp is pink and cooked through.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with cilantro and red chili pepper.
