Description

Ingredients

  • 1 can coconut milk
  • 2 tablespoons peanut butter
  • 2 tablespoons red curry paste
  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Cooked rice for serving


Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add shrimp and cook until pink, about 3-4 minutes.
  3. Stir in sliced bell peppers and cook for another 2-3 minutes.
  4. Whisk together coconut milk, peanut butter, and red curry paste in a separate bowl until smooth.
  5. Pour the sauce over the shrimp and bell peppers, stirring to combine.

Notes

For a spicier dish, increase the amount of red curry paste. Fresh herbs like cilantro or basil make excellent garnishes.
