Description

A flavorful and comforting dish featuring flaky fish fillets, creamy coconut milk, and vibrant Thai green curry paste.


Ingredients

  • 400g flaky fish fillets (e.g., cod or tilapia)
  • 1 can (400ml) coconut milk
  • 2-3 tablespoons Thai green curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • Fresh basil leaves for garnish
  • Cooked jasmine rice, for serving


Instructions

  1. Combine the coconut milk and Thai green curry paste in a large skillet over medium heat. Stir until well combined.
  2. Add the fish fillets to the skillet, gently nestling them into the sauce.
  3. Pour in the fish sauce and brown sugar, stirring gently to combine.
  4. Cook for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Serve hot, garnished with fresh basil leaves, over cooked jasmine rice.

Notes

Taste the sauce before serving and adjust the fish sauce or brown sugar as needed. For extra spice, add sliced green chilies during cooking.
