Ingredients
- 2 cups cooked jasmine rice
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 onion, diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 2 green onions, chopped
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat vegetable oil in a large skillet over medium heat. Add minced garlic and diced onion, sauté until fragrant.
- Add mixed vegetables and cook for a few minutes until tender.
- Push the vegetables to one side, add the beaten eggs to the other side, and scramble until fully cooked.
- Stir in the cooked rice, soy sauce, fish sauce, and sugar. Mix everything until well combined.
- Add green onions and stir-fry for another couple of minutes.
- Serve hot, garnished with cilantro and lime wedges.
Notes
For enhanced flavor, add sesame oil or freshly grated ginger. Serve with cucumber salad or steamed dumplings for a complete meal.
