Description

A delicious and versatile dish that showcases the harmonious blend of jasmine rice, garlic, vegetables, and eggs, delivering a comforting meal in no time.


Ingredients

  • 2 cups cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 2 green onions, chopped
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add minced garlic and diced onion, sauté until fragrant.
  2. Add mixed vegetables and cook for a few minutes until tender.
  3. Push the vegetables to one side, add the beaten eggs to the other side, and scramble until fully cooked.
  4. Stir in the cooked rice, soy sauce, fish sauce, and sugar. Mix everything until well combined.
  5. Add green onions and stir-fry for another couple of minutes.
  6. Serve hot, garnished with cilantro and lime wedges.

Notes

For enhanced flavor, add sesame oil or freshly grated ginger. Serve with cucumber salad or steamed dumplings for a complete meal.
