Ingredients

  • Beef, large, peeled and deveined – 1 pound (450 g)
  • Lemongrass, minced – 2 stalks
  • Thai red chili paste – 2 tablespoons (30 g)
  • Garlic, minced – 4 cloves
  • Soy sauce – 3 tablespoons (45 ml)
  • Lime juice – 2 tablespoons (30 ml)
  • Brown sugar – 1 tablespoon (15 g)
  • Vegetable oil – 3 tablespoons (45 ml)
  • Basil leaves, fresh – 1 cup (20 g)
  • Jasmine rice, cooked – 2 cups (400 g)
  • Green onions, chopped – 3
  • Red bell pepper, diced – 1
  • Lime, sliced, for garnish
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. In a mixing bowl, combine minced lemongrass, Thai red chili paste, minced garlic, soy sauce, lime juice, and brown sugar.
  2. Add shrimp to the bowl and toss to coat evenly with the marinade. Let it marinate for 20-30 minutes.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  4. Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through.
  5. Remove the shrimp from the skillet and set aside.
  6. In the same skillet, heat the remaining 2 tablespoons of vegetable oil over medium heat.
  7. Add chopped green onions and diced red bell pepper to the skillet, and sauté until softened, about 3-4 minutes.
  8. Add cooked jasmine rice to the skillet, stirring well to combine with the vegetables.
  9. Stir in fresh basil leaves, salt, and black pepper to taste.
  10. Cook the rice mixture for another 2-3 minutes, ensuring everything is heated through.
  11. Return the cooked shrimp to the skillet, mixing with the fried rice until well combined.
  12. Serve the grilled shrimp and fried rice on a platter.
  13. Garnish with lime slices before serving.
