Ingredients

  • 2 salmon fillets (about 225 g each) (8 oz each)
  • 2 ripe avocados
  • 1/4 cup soy sauce (60 ml)
  • 2 tablespoons honey (30 ml)
  • 1 tablespoon rice vinegar (15 ml)
  • 1 tablespoon sesame oil (15 ml)
  • 1 clove garlic, minced
  • 1 teaspoon (5 ml) grated fresh ginger
  • 1 tablespoon (15 ml) sesame seeds
  • 2 green onions, sliced
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
  3. Place the salmon fillets in a shallow dish and pour half of the sauce mixture over them.
  4. Let the salmon marinate for 10 minutes.
  5. Place the marinated salmon fillets on a baking sheet lined with parchment paper.
  6. Season the salmon with salt and black pepper to taste.
  7. Bake the salmon in the preheated oven for 12-15 minutes, or until fully cooked.
  8. While the salmon is baking, cut the avocados in half and remove the pits.
  9. Gently scoop a small amount of avocado flesh from each half to create a boat shape.
  10. After removing from the oven, let the salmon cool slightly, then flake it into bite-sized pieces.
  11. Divide the flaked salmon evenly among the avocado halves.
  12. Drizzle the remaining sauce mixture over the salmon-stuffed avocados.
  13. Sprinkle sesame seeds over the top for garnish.
  14. Top with sliced green onions.
  15. Serve immediately while the avocados are fresh.
