Ingredients
- 2 salmon fillets (about 225 g each) (8 oz each)
- 2 ripe avocados
- 1/4 cup soy sauce (60 ml)
- 2 tablespoons honey (30 ml)
- 1 tablespoon rice vinegar (15 ml)
- 1 tablespoon sesame oil (15 ml)
- 1 clove garlic, minced
- 1 teaspoon (5 ml) grated fresh ginger
- 1 tablespoon (15 ml) sesame seeds
- 2 green onions, sliced
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
- Place the salmon fillets in a shallow dish and pour half of the sauce mixture over them.
- Let the salmon marinate for 10 minutes.
- Place the marinated salmon fillets on a baking sheet lined with parchment paper.
- Season the salmon with salt and black pepper to taste.
- Bake the salmon in the preheated oven for 12-15 minutes, or until fully cooked.
- While the salmon is baking, cut the avocados in half and remove the pits.
- Gently scoop a small amount of avocado flesh from each half to create a boat shape.
- After removing from the oven, let the salmon cool slightly, then flake it into bite-sized pieces.
- Divide the flaked salmon evenly among the avocado halves.
- Drizzle the remaining sauce mixture over the salmon-stuffed avocados.
- Sprinkle sesame seeds over the top for garnish.
- Top with sliced green onions.
- Serve immediately while the avocados are fresh.
