  • Cornstarch, 1/2 cup (120 ml) (60 grams)
  • Baking powder, 1 teaspoon (5 ml) (5 grams)
  • Salt, 1/2 teaspoon (3 ml) (3 grams)
  • Cold sparkling water, 1 cup (240 ml) (240 milliliters)
  • Vegetable oil, for frying
  • Mayonnaise, 1/2 cup (120 ml) (120 grams)
  • Wasabi paste, 2 teaspoons (10 ml) (10 grams)
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Soy sauce, 1 teaspoon (5 ml) (5 milliliters)


Instructions

  1. In a bowl, combine all-purpose flour, cornstarch, baking powder, and salt.
  2. Gradually add cold sparkling water to the dry ingredients, stirring until smooth.
  3. Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
  4. Dip each crab stick into the batter, ensuring it is fully coated.
  5. Carefully place the coated crab sticks into the hot oil.
  6. Fry the crab sticks until golden brown and crispy, about 2-3 minutes.
  7. Remove the crab sticks from oil and drain on paper towels.
  8. In a separate bowl, mix together mayonnaise, wasabi paste, lemon juice, and soy sauce.
