Description

Delightful grilled vegetables featuring bell peppers, zucchini, and red onion, perfect as a side dish or light main course.


Ingredients

  • 2 Bell peppers, chopped
  • 1 Zucchini, chopped
  • 1 Red onion, chopped
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Garlic powder
  • Fresh herbs (optional, e.g. parsley, basil, thyme)


Instructions

  1. Preheat the grill to medium-high heat.
  2. Chop the veggies into bite-sized pieces.
  3. In a bowl, toss the veggies with olive oil, salt, pepper, and garlic powder.
