Delightful grilled vegetables featuring bell peppers, zucchini, and red onion, perfect as a side dish or light main course.
Ingredients
- 2 Bell peppers, chopped
- 1 Zucchini, chopped
- 1 Red onion, chopped
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Garlic powder
- Fresh herbs (optional, e.g. parsley, basil, thyme)
Instructions
- Preheat the grill to medium-high heat.
- Chop the veggies into bite-sized pieces.
- In a bowl, toss the veggies with olive oil, salt, pepper, and garlic powder.
- Place the veggies in a grill basket or on skewers.
- Grill for about 10-15 minutes, turning occasionally, until tender and slightly charred.
- Garnish with fresh herbs before serving.
Notes
Make sure to soak skewers if using them, and avoid overcrowding the grill for the best results.
