Ingredients
- 4 cod fillets (24 oz / 680 g)
- 1 tablespoon olive oil (15 ml)
- Salt and pepper to taste
- 1 can (13.5 oz / 400 ml) coconut milk
- 2 tablespoons lemon juice (30 ml)
- 1 teaspoon (5 ml) lemon zest
- 2 garlic cloves, minced
- 1 tablespoon (15 ml) grated ginger (optional)
- 1 tablespoon (15 ml) cornstarch mixed with 2 tablespoons (30 ml) water (slurry)
- Fresh parsley or cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly coat a baking dish with oil and arrange the cod fillets inside. Drizzle with olive oil, then sprinkle with salt and pepper.
- In a pot over medium heat, blend together the coconut milk, lemon juice, lemon zest, minced garlic, and ginger. Allow the mixture to come to a gentle simmer.
- Add the cornstarch mixture and stir until the sauce begins to thicken.
- Pour the prepared sauce over the cod fillets and bake for 20 minutes, or until the fish is tender and easily flakes with a fork.
