Ingredients

  • 4 cod fillets (24 oz / 680 g)
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper to taste
  • 1 can (13.5 oz / 400 ml) coconut milk
  • 2 tablespoons lemon juice (30 ml)
  • 1 teaspoon (5 ml) lemon zest
  • 2 garlic cloves, minced
  • 1 tablespoon (15 ml) grated ginger (optional)
  • 1 tablespoon (15 ml) cornstarch mixed with 2 tablespoons (30 ml) water (slurry)
  • Fresh parsley or cilantro for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
