Description

A delicious sweet soy glazed basa fillet recipe, balancing flavor and simplicity for a perfect seafood dish.


Ingredients

  • 500g basa fillet (around 2 pieces)
  • 3 tbsp flour
  • Sea salt and black pepper, to taste
  • 2 tbsp canola oil (divided)
  • White sesame seeds, toasted (optional)
  • 4.5 tbsp soy sauce
  • 3 tbsp mirin
  • 3 tbsp sake
  • 2 tbsp sugar


Instructions

  1. Combine all ingredients for the soy glaze in a bowl and set aside.
  2. Place the flour in a shallow dish.
  3. Pat dry the basa fillets and cut them into individual portions. Season each fillet with sea salt and fresh black pepper on both sides.
  4. Press the seasoned fillet pieces into the flour, coating both sides well, and dust off any excess flour. Set aside.
  5. Heat 1 tablespoon of canola oil in a frying pan over medium heat. Add half of the fillets and cook until both sides are golden, approximately 7 minutes.
  6. Wipe off the pan, then heat the remaining tablespoon of oil and cook the remaining fillets until golden.
  7. Once all fillets are cooked, add them back to the pan. Turn up the heat and pour in the soy glaze mixture. Allow it to boil for several minutes, stirring occasionally to reduce and thicken.
  8. While the glaze boils, spoon it over the fish to enhance flavor and create a glossy look.
  9. Serve the basa fillets over hot rice, drizzle with extra glaze, and top with toasted white sesame seeds if desired.

Notes

Using a non-stick pan helps prevent the fish from sticking. Adjust the thickness of the glaze as needed.
