- Fresh parsley: 2 tablespoons (8g) chopped
- Garlic powder: 1 teaspoon (3g)
- Salt: 1 teaspoon (6g)
- Black pepper: 1/2 teaspoon (1g)
- Olive oil: 2 tablespoons (30ml)
- Mayonnaise: 1/2 cup (120ml)
- Tomato paste: 1 tablespoon (15g) minced
- Lime juice: 1 tablespoon (15ml)
- Salt: 1/4 teaspoon (1.5g)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the mashed sweet potatoes and flaked salmon.
- Add the eggs, breadcrumbs, green onions, parsley, garlic powder, salt, and black pepper to the bowl.
- Mix the ingredients until well combined.
- Shape the mixture into patties, about the size of your palm.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Cook the patties in batches for about 3-4 minutes on each side, until golden brown.
- Transfer the cooked patties to a baking sheet.
- Place the baking sheet in the preheated oven and bake for 10 minutes.
- In a small bowl, mix the mayonnaise, chipotle peppers, lime juice, and salt.
- Stir until the aioli is smooth and well combined.
