Ingredients
- Salmon fillets – 4 pieces
- Soy sauce – 1/4 cup (60 ml)
- Honey – 3 tablespoons (45 ml)
- Garlic cloves, minced – 2
- Ginger, grated – 1 teaspoon (5 g)
- Sesame oil – 2 teaspoons (10 ml)
- Sriracha – 1 teaspoon (5 ml)
- Lime juice – 1 tablespoon (15 ml)
- Cucumber, spiralized – 2 large
- Sesame seeds – 2 tablespoons (18 g)
- Green onions, sliced – 2
- Olive oil – 1 tablespoon (15 ml)
- Salt – to taste
- Black pepper – to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine soy sauce, honey, minced garlic, grated ginger, sesame oil, sriracha, and lime juice.
- Place salmon fillets in a baking dish and pour the marinade over them.
- Let the salmon marinate for at least 15 minutes.
- Meanwhile, spiralize the cucumbers if not already done.
- Drizzle olive oil over the spiralized cucumbers and toss to coat.
- Season cucumber noodles with salt and black pepper to taste.
- Sprinkle sesame seeds and sliced green onions over the cucumber noodles.
- After marinating, place the salmon in the preheated oven.
- Bake the salmon for 12-15 minutes or until cooked through.
- Remove the salmon from the oven and let it rest for a few minutes.
- Serve the salmon over the sesame cucumber noodles.
- Drizzle some of the remaining glaze from the baking dish over the salmon.
- Garnish with additional sesame seeds and green onions if desired.
