Ingredients

  • Salmon fillets – 4 pieces
  • Soy sauce – 1/4 cup (60 ml)
  • Honey – 3 tablespoons (45 ml)
  • Garlic cloves, minced – 2
  • Ginger, grated – 1 teaspoon (5 g)
  • Sesame oil – 2 teaspoons (10 ml)
  • Sriracha – 1 teaspoon (5 ml)
  • Lime juice – 1 tablespoon (15 ml)
  • Cucumber, spiralized – 2 large
  • Sesame seeds – 2 tablespoons (18 g)
  • Green onions, sliced – 2
  • Olive oil – 1 tablespoon (15 ml)
  • Salt – to taste
  • Black pepper – to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine soy sauce, honey, minced garlic, grated ginger, sesame oil, sriracha, and lime juice.
  3. Place salmon fillets in a baking dish and pour the marinade over them.
  4. Let the salmon marinate for at least 15 minutes.
  5. Meanwhile, spiralize the cucumbers if not already done.
  6. Drizzle olive oil over the spiralized cucumbers and toss to coat.
  7. Season cucumber noodles with salt and black pepper to taste.
  8. Sprinkle sesame seeds and sliced green onions over the cucumber noodles.
  9. After marinating, place the salmon in the preheated oven.
  10. Bake the salmon for 12-15 minutes or until cooked through.
  11. Remove the salmon from the oven and let it rest for a few minutes.
  12. Serve the salmon over the sesame cucumber noodles.
  13. Drizzle some of the remaining glaze from the baking dish over the salmon.
  14. Garnish with additional sesame seeds and green onions if desired.
