Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 1 cup (240 ml) pineapple chunks, fresh or canned (150 grams)
  • 120 milliliters sweet chili sauce
  • 30 milliliters soy sauce
  • 30 milliliters honey
  • 15 milliliters lime juice
  • 2 cloves garlic, minced
  • 15 milliliters vegetable oil
  • 5 grams salt
  • 5 grams black pepper
  • 15 milliliters chopped fresh cilantro (optional, for garnish)


Instructions

  1. In a bowl, combine sweet chili sauce, soy sauce, honey, lime juice, and minced garlic. Stir well.
  2. Add shrimp to the bowl and toss until fully coated. Let marinate for 10-15 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Add marinated shrimp to the skillet, reserving the marinade.
  5. Cook shrimp for 2-3 minutes per side until pink and opaque.
  6. Remove shrimp from the skillet and set aside.
  7. In the same skillet, add pineapple chunks and cook for 2 minutes.
  8. Pour the reserved marinade into the skillet with pineapple.
  9. Bring to a simmer and cook for 3-4 minutes until sauce thickens.
  10. Return shrimp to the skillet and toss to coat in the sauce.
  11. Season with salt and black pepper, stirring to combine.
  12. Cook for an additional 1-2 minutes until warmed through.
  13. Remove from heat and garnish with chopped cilantro if using.
  14. Serve hot with your choice of side.
