Ingredients
- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 1 cup (240 ml) pineapple chunks, fresh or canned (150 grams)
- 120 milliliters sweet chili sauce
- 30 milliliters soy sauce
- 30 milliliters honey
- 15 milliliters lime juice
- 2 cloves garlic, minced
- 15 milliliters vegetable oil
- 5 grams salt
- 5 grams black pepper
- 15 milliliters chopped fresh cilantro (optional, for garnish)
Instructions
- In a bowl, combine sweet chili sauce, soy sauce, honey, lime juice, and minced garlic. Stir well.
- Add shrimp to the bowl and toss until fully coated. Let marinate for 10-15 minutes.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add marinated shrimp to the skillet, reserving the marinade.
- Cook shrimp for 2-3 minutes per side until pink and opaque.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add pineapple chunks and cook for 2 minutes.
- Pour the reserved marinade into the skillet with pineapple.
- Bring to a simmer and cook for 3-4 minutes until sauce thickens.
- Return shrimp to the skillet and toss to coat in the sauce.
- Season with salt and black pepper, stirring to combine.
- Cook for an additional 1-2 minutes until warmed through.
- Remove from heat and garnish with chopped cilantro if using.
- Serve hot with your choice of side.
