Ingredients
- – 8 oz (250 g) uncooked rice noodles
- – 3 tbsp (45 ml) Gochujang paste
- – 3 tbsp (45 ml) Hoisin sauce
- – 2 tbsp (30 ml) dark soy sauce
- – 3 tbsp (45 ml) lime juice
- – 2 tbsp (30 ml) sesame oil
- – 1 tbsp (15 ml) minced garlic
- – 1 tsp (5 ml) brown sugar
- – 1 tbsp (15 ml) vegetable oil
- – 1/2 cup (120 ml) thinly sliced mixed bell peppers
- – 1 cup (240 ml) shredded cabbage
- – 1/2 cup (120 ml) shredded carrots
Instructions
- Prepare the rice noodles according to the instructions on the packaging, then drain them and set them aside.
- Hint: Avoid overcooking the noodles to prevent them from becoming mushy in the dish.
- In a small bowl, combine the gochujang paste, hoisin sauce, dark soy sauce, lime juice, sesame oil, minced garlic, and brown sugar.
- Warm the vegetable oil in a large frying pan over high heat.
- Once the oil is heated, add the sliced bell peppers, shredded cabbage, and shredded carrots, and stir-fry them on high heat for a minute.
- Mix in the cooked noodles and the prepared sauce, ensuring everything is evenly coated by tossing with two large spoons or tongs.
- Top with chopped green onions and toasted sesame seeds before serving hot.
