Ingredients

  • – 8 oz (250 g) uncooked rice noodles
  • – 3 tbsp (45 ml) Gochujang paste
  • – 3 tbsp (45 ml) Hoisin sauce
  • – 2 tbsp (30 ml) dark soy sauce
  • – 3 tbsp (45 ml) lime juice
  • – 2 tbsp (30 ml) sesame oil
  • – 1 tbsp (15 ml) minced garlic
  • – 1 tsp (5 ml) brown sugar
  • – 1 tbsp (15 ml) vegetable oil
  • – 1/2 cup (120 ml) thinly sliced mixed bell peppers
  • – 1 cup (240 ml) shredded cabbage
  • – 1/2 cup (120 ml) shredded carrots


Instructions

  1. Prepare the rice noodles according to the instructions on the packaging, then drain them and set them aside.
  2. Hint: Avoid overcooking the noodles to prevent them from becoming mushy in the dish.
  3. In a small bowl, combine the gochujang paste, hoisin sauce, dark soy sauce, lime juice, sesame oil, minced garlic, and brown sugar.
  4. Warm the vegetable oil in a large frying pan over high heat.
  5. Once the oil is heated, add the sliced bell peppers, shredded cabbage, and shredded carrots, and stir-fry them on high heat for a minute.
  6. Mix in the cooked noodles and the prepared sauce, ensuring everything is evenly coated by tossing with two large spoons or tongs.
  7. Top with chopped green onions and toasted sesame seeds before serving hot.
