Ingredients

  • 2 tbsp. vegetable oil (30 ml)
  • 1 lb. shrimp, peeled, deveined (450 g)
  • Salt
  • Pepper
  • 1 tbsp. sesame oil (15 ml)
  • 1 small head of broccoli, cut into small florets
  • 1 red bell pepper, seeds and ribs removed, thinly sliced
  • 8 oz. sugar snap peas (225 g)
  • 3 garlic cloves, minced
  • 1 tbsp (15 ml). finely chopped peeled ginger
  • 1/2 c. soy sauce (120 ml)
  • Juice of 1 lime
  • 2 tbsp. brown sugar (30 g)
  • 1 tbsp. cornstarch (8 g)
  • Pinch of crushed red pepper flakes


Instructions

  1. In a large wok or frying pan on medium heat, warm up vegetable oil. Place shrimp in the pan; sprinkle with salt and pepper. Sauté, flipping once, until they turn pink, around 2 to 3 minutes. Move shrimp to a separate dish.
  2. In the same pan over medium heat, pour in sesame oil. Introduce broccoli, bell pepper, and sugar snap peas, and stir-fry, adding a bit of water if they begin to brown too fast, until they become tender, roughly 7 minutes. Mix in garlic and ginger, stirring continuously, until their aroma is released, approximately 1 more minute.
  3. In a small mixing bowl, whisk together soy sauce, lime juice, brown sugar, cornstarch, and a pinch of red pepper flakes. Pour this mixture into the pan and stir to coat the vegetables. Return the shrimp to the pan and cook, stirring often, until they are fully warmed, about 2 minutes.

Notes

  • Marinate shrimp in soy sauce, garlic, and ginger for added flavor before cooking.
  • Add mushrooms or water chestnuts for texture and variety.
  • Adjust red pepper flakes to taste for desired spice level.
