Description

A flavorful and nutritious dish that combines flaky salmon with a savory filling of spinach, feta cheese, and roasted red peppers.


Ingredients

  • 4 x 6-ounce pieces of salmon (approx. 170 grams each)
  • 2 Tbsp olive oil (divided)
  • 3 cups baby spinach, packed
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • A pinch of cayenne pepper
  • Approx. 5.3-ounce block of feta cheese (approx. 150 grams)
  • 1/4 cup parmesan, freshly grated
  • 1/4 cup jarred roasted red peppers (chopped into small pieces)
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Place the salmon pieces on the lined baking sheet, skin-side down.
  3. Using a sharp knife, slice each piece of salmon lengthwise down the middle, ensuring not to cut all the way through.
  4. Brush each salmon piece with 1 tablespoon of olive oil and season with salt and pepper.
  5. Heat the remaining olive oil in a large pan over medium heat. Once hot, add the baby spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté for a couple of minutes until the spinach wilts.
  6. Remove from heat and stir in the chopped roasted red peppers, feta cheese, and parmesan. Combine thoroughly, pressing on the feta to soften it until everything sticks together.
  7. Spoon the mixture into the cut portion of each salmon piece until they are evenly filled.
  8. Bake in the preheated oven for 12-17 minutes, depending on how thick the fish is and your desired doneness.
  9. Remove from the oven and serve hot with your preferred side dish.

Notes

For a crispier top, consider broiling the salmon for the last couple of minutes.
