Description
A flavorful and nutritious dish that combines flaky salmon with a savory filling of spinach, feta cheese, and roasted red peppers.
Ingredients
- 4 x 6-ounce pieces of salmon (approx. 170 grams each)
- 2 Tbsp olive oil (divided)
- 3 cups baby spinach, packed
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- A pinch of cayenne pepper
- Approx. 5.3-ounce block of feta cheese (approx. 150 grams)
- 1/4 cup parmesan, freshly grated
- 1/4 cup jarred roasted red peppers (chopped into small pieces)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Place the salmon pieces on the lined baking sheet, skin-side down.
- Using a sharp knife, slice each piece of salmon lengthwise down the middle, ensuring not to cut all the way through.
- Brush each salmon piece with 1 tablespoon of olive oil and season with salt and pepper.
- Heat the remaining olive oil in a large pan over medium heat. Once hot, add the baby spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté for a couple of minutes until the spinach wilts.
- Remove from heat and stir in the chopped roasted red peppers, feta cheese, and parmesan. Combine thoroughly, pressing on the feta to soften it until everything sticks together.
- Spoon the mixture into the cut portion of each salmon piece until they are evenly filled.
- Bake in the preheated oven for 12-17 minutes, depending on how thick the fish is and your desired doneness.
- Remove from the oven and serve hot with your preferred side dish.
Notes
For a crispier top, consider broiling the salmon for the last couple of minutes.
