Ingredients

  • 12 oz (340 g) shrimp, peeled and deveined
  • 8 oz (225 g) noodles, such as rice noodles or egg noodles
  • 2 tablespoons (30 ml) vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon (15 ml) ginger, minced
  • 1 cup (150 g) peas, fresh or frozen
  • 1 red bell pepper, sliced
  • 3 tablespoons (45 ml) soy sauce
  • 1 tablespoon (15 ml) soy sauce
  • 1 teaspoon (5 ml) sesame oil
  • 2 green onions, sliced
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Cook the noodles according to package instructions, then drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
  3. Add the shrimp to the pan and season with salt and black pepper.
  4. Stir-fry the shrimp for 3-4 minutes until pink and cooked through, then remove from the pan.
  5. In the same pan, add the remaining 1 tablespoon of vegetable oil.
  6. Add minced garlic and ginger, and stir-fry for 30 seconds until fragrant.
  7. Add the peas and sliced bell pepper to the pan.
  8. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
  9. Return the cooked shrimp to the pan with the vegetables.
  10. Add the cooked noodles to the pan and toss everything together.
  11. Pour in the soy sauce, oyster sauce, and sesame oil.
  12. Stir-fry for 2-3 minutes, ensuring the noodles are evenly coated with the sauces.
  13. Add the sliced green onions and toss to combine.
  14. Adjust seasoning with additional salt and black pepper if needed.
  15. Serve hot and enjoy.
