Ingredients
- 12 oz (340 g) shrimp, peeled and deveined
- 8 oz (225 g) noodles, such as rice noodles or egg noodles
- 2 tablespoons (30 ml) vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon (15 ml) ginger, minced
- 1 cup (150 g) peas, fresh or frozen
- 1 red bell pepper, sliced
- 3 tablespoons (45 ml) soy sauce
- 1 tablespoon (15 ml) soy sauce
- 1 teaspoon (5 ml) sesame oil
- 2 green onions, sliced
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the noodles according to package instructions, then drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
- Add the shrimp to the pan and season with salt and black pepper.
- Stir-fry the shrimp for 3-4 minutes until pink and cooked through, then remove from the pan.
- In the same pan, add the remaining 1 tablespoon of vegetable oil.
- Add minced garlic and ginger, and stir-fry for 30 seconds until fragrant.
- Add the peas and sliced bell pepper to the pan.
- Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
- Return the cooked shrimp to the pan with the vegetables.
- Add the cooked noodles to the pan and toss everything together.
- Pour in the soy sauce, oyster sauce, and sesame oil.
- Stir-fry for 2-3 minutes, ensuring the noodles are evenly coated with the sauces.
- Add the sliced green onions and toss to combine.
- Adjust seasoning with additional salt and black pepper if needed.
- Serve hot and enjoy.
