Description

Ingredients

  • 1 whole fish, about 1.5 pounds (680 g) (680 grams), cleaned and scaled
  • 30 ml soy sauce
  • 15 ml sesame oil
  • 4-5 thin slices of fresh ginger
  • 3 scallions, cut into 2-inch (5 cm) pieces
  • 15 ml vegetable oil
  • Salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Rinse the whole fish under cold water and pat dry with paper towels.
  2. Season the fish with salt and freshly ground black pepper on both sides.
  3. Place the fish on a heatproof plate that fits inside your steamer.
  4. Arrange the ginger slices evenly on top of the fish.
  5. Fill a large pot or wok with a couple of inches of water and bring to a boil.
  6. Place the plate with the fish into the steamer basket.
  7. Cover the steamer and steam the fish over boiling water for 10-12 minutes, or until the fish is cooked through.
  8. Carefully remove the plate from the steamer and set aside.
  9. In a small bowl, mix the soy sauce and sesame oil together.
  10. Heat the vegetable oil in a small pan over medium-high heat until hot.
  11. Scatter the scallion pieces over the steamed fish.
  12. Pour the hot vegetable oil over the scallions and fish to sizzle and enhance flavor.
  13. Drizzle the soy sauce and sesame oil mixture over the fish.
  14. Serve the steamed fish immediately.

  • Consider thinly slicing the ginger for a more intense flavor.
  • Adjust soy sauce and sesame oil to your taste.
  • Sprinkle chopped red chili peppers for added heat before steaming.
