Description

Ingredients

  • 2 salmon fillets
  • 1 cup fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add spinach and cook until wilted.
  4. In a bowl, mix cooked spinach, cream cheese, feta, and mozzarella until well combined. Season with salt and pepper.
  5. Slice a pocket into each salmon fillet and stuff with the spinach mixture.
