Description

A comforting and satisfying dish featuring tender pasta, flaky salmon, and vibrant spinach in a creamy Parmesan sauce.


Ingredients

  • 12 ounces pasta (penne, farfalle, or your choice)
  • 2 tbsp olive oil
  • 1 pound salmon fillets (skin removed)
  • Salt and pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp lemon zest
  • 1 tbsp lemon juice


Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Season the salmon with salt and pepper, then cook for 4-5 minutes per side until cooked through. Remove and set aside.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, bring to a simmer. Stir in Parmesan cheese until melted.
  5. Add spinach and cook until wilted, about 2 minutes.
  6. Flake the cooked salmon into bite-sized pieces and add it back to the skillet.
  7. Gently fold in the cooked pasta, lemon zest, and lemon juice. Mix until well combined and heated through.
  8. Serve immediately, garnished with additional Parmesan cheese if desired.

Notes

For extra flavor, you can season salmon with herbs like dill or parsley. A pinch of red pepper flakes can add a slight kick.
