A comforting and satisfying dish featuring tender pasta, flaky salmon, and vibrant spinach in a creamy Parmesan sauce.
Ingredients
- 12 ounces pasta (penne, farfalle, or your choice)
- 2 tbsp olive oil
- 1 pound salmon fillets (skin removed)
- Salt and pepper (to taste)
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 1 tsp lemon zest
- 1 tbsp lemon juice
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Season the salmon with salt and pepper, then cook for 4-5 minutes per side until cooked through. Remove and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, bring to a simmer. Stir in Parmesan cheese until melted.
- Add spinach and cook until wilted, about 2 minutes.
- Flake the cooked salmon into bite-sized pieces and add it back to the skillet.
- Gently fold in the cooked pasta, lemon zest, and lemon juice. Mix until well combined and heated through.
- Serve immediately, garnished with additional Parmesan cheese if desired.
Notes
For extra flavor, you can season salmon with herbs like dill or parsley. A pinch of red pepper flakes can add a slight kick.
