Description

Delightful pinwheels of salmon stuffed with a flavorful mixture of spinach, feta, and garlic, perfect for any occasion.


Ingredients

  • 1 large salmon fillet (about lbs, skinless)
  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine (to hold the pinwheels)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, olive oil, cream cheese, lemon zest, lemon juice, dill, salt, and pepper. Stir until well blended.
  3. Lay the skinless salmon fillet on a flat surface. Carefully spread the spinach and feta mixture evenly over the salmon, ensuring it covers the entire surface.
  4. Starting from one end, tightly roll the salmon fillet into a pinwheel shape. Secure the roll with toothpicks or kitchen twine to hold everything in place.
  5. Place the salmon pinwheels seam side down in a greased baking dish.
  6. Bake for approximately 25-30 minutes or until the salmon is cooked through, and the filling is heated thoroughly.

Notes

For a crispy exterior, consider searing the pinwheels briefly in a hot skillet before baking.
