Description

Delicious salmon pinwheels stuffed with fresh spinach and crumbled feta cheese, perfect for a cozy evening.


Ingredients

  • 4 salmon fillets
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add garlic and spinach, cooking until the spinach is wilted.
  3. Combine the cooked spinach and feta cheese in a bowl. Season with salt and pepper.
  4. Lay the salmon fillets skin side down and spread the spinach and feta mixture evenly on top.
  5. Roll each fillet tightly and secure with toothpicks if needed.
  6. Place the rolled salmon in a baking dish and bake for about 15-20 minutes, or until the salmon is cooked through.
