Description

A comforting bowl of spicy shrimp ramen featuring crispy shrimp, tender noodles, and a rich broth infused with Thai red curry paste and coconut cream.


Ingredients

  • 6 large shrimp (tail on)
  • 1 package ramen noodles + seasoning
  • 1 stalk green onion (sliced)
  • 1/2 small white onion (sliced)
  • 1 tbsp soy sauce
  • 1 tbsp Thai red curry paste
  • Sriracha to taste
  • 2 tbsp unsweetened coconut cream
  • 1 cup spinach or bok choy
  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • 1 1/2 cups chicken broth or shrimp stock
  • 1/2 lime (juiced)


Instructions

  1. Heat olive oil in a medium pot over medium heat. Add the sliced white onion and cook until soft, about 3 minutes.
  2. Add shrimp and cook for 2–3 minutes per side until pink and slightly crisped. Remove and set aside.
  3. Stir in Thai red curry paste and cook for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a gentle simmer.
  5. Add soy sauce, coconut cream, and Sriracha to taste.
  6. Cook the ramen noodles according to package instructions.
  7. Add spinach or bok choy to wilt during the last minute of cooking.
  8. Return shrimp to the pot, squeeze in lime juice, and stir.
  9. Top with green onions and serve hot.

Notes

For added freshness, consider garnishing with cilantro or basil. Adjust Sriracha for your desired spice level.
