Ingredients
- 1 cup (240 ml) cooked rice
- 2 large cucumbers
- 1 tbsp (15 ml) sesame seeds
- 24 shrimp, peeled + deveined
- 2 tbsp (30 ml) olive oil
- 3/4 tsp (4 ml) of each garlic powder, onion powder, paprika, chili powder, dried oregano
- Salt to taste
- 3 avocados, rough mash
- 1 lime, juiced
- Salt to taste
- 1/4 cup (60 ml) mayonnaise
- 2 tsp (10 ml) hot sauce
- 1 tsp (5 ml) honey (optional)
Instructions
- Toss the shrimp in olive oil along with the spices mentioned.
- Warm up a large pan over medium-high heat and sauté the shrimp until they turn opaque, roughly 2 minutes on each side.
- Mix all relevant ingredients and adjust the flavors if necessary.
- Blend the ingredients together and modify to taste if required.
- Thoroughly clean and dry the cucumbers. Cut them lengthwise and then halve those sections again. Use a spoon to remove as many seeds and pulp as you can.
- Begin by spreading approximately one tablespoon of the mashed avocado into each cucumber section. Next, layer with rice evenly. Place three shrimp on top, drizzle with the spicy mayonnaise, and finish with a sprinkle of sesame seeds.
