Description

A hearty and flavorful dish featuring sardines and eggs, perfect for any time of day.


Ingredients

  • 1/2 onion, sliced
  • 3 cloves garlic, sliced
  • 2 fresh chilies (optional), sliced
  • 1 (15oz) can sardine in tomato sauce
  • 1/4 can water
  • 1.5 tbsp fish sauce
  • 1/2 tbsp oyster sauce
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 1 tbsp chili powder (optional)
  • 4 eggs


Instructions

  1. Heat a medium skillet over medium heat. Add the sliced onion and sauté until they become translucent.
  2. Add the sliced garlic and optional fresh chilies, stirring until the garlic releases its fragrance.
  3. Introduce the canned sardines and pour in a quarter can of water. You may crush the sardines gently with the spatula if preferred.
  4. Season the mixture with fish sauce, oyster sauce, rice vinegar, sugar, and optional chili powder. Stir well and bring to a boil.
  5. Once boiling, carefully crack four eggs into the skillet.
  6. Reduce the heat to medium-low and cover the skillet. The eggs will cook through to your desired doneness.
  7. After cooking, turn off the heat, garnish, and prepare to serve.

Notes

Serve with crusty bread or white rice. Store leftovers in an airtight container for up to two days.
