Ingredients
- 300g (10.5 oz) peeled and deveined shrimp
- 1 tsp (5 ml) sea salt
- 1/8 tsp (1 ml) ground white pepper
- 1/2 tsp (3 ml) sesame oil
- 1 tbsp (15 ml) finely grated ginger
- 11/2 tbsp (83 ml) chicken stock
- 2 tsp (10 ml) corn flour (cornstarch)
- 2 tbsp (30 ml) finely sliced spring onion (scallions)
- 20 wonton wrappers
- sesame seeds, to serve
- Spicy red oil sauce:
- 4 tbsp (60 ml) chili oil
- 2 tbsp (30 ml) soy sauce
- 1 tbsp (15 ml) white vinegar
- 1/2 garlic clove, finely grated
- 1 tbsp (15 ml) finely chopped coriander (cilantro)
- 1 tbsp (15 ml) finely chopped spring onion (scallions)
Instructions
- Use a sharp blade to finely mince the shrimp meat. Transfer it to a large mixing bowl and incorporate the salt, pepper, sesame oil, ginger, chicken stock, corn flour, and spring onion. Stir energetically for a couple of minutes until everything blends well. The mixture will become sticky and more cohesive.
- Place a spoonful of the shrimp mixture in the center of a wonton wrapper. Wet the wrapper’s edges with water. Fold the wrapper over the filling to create a triangle shape. Seal the edges by pressing firmly to remove any trapped air. Bring the two corners of the triangle’s long side together, dampen the tips, and press to seal. You should now have a dumpling resembling a bonnet or diamond shape. Set it on a tray lined with parchment paper. Repeat the process with the rest of the filling and wrappers. Cover them with plastic wrap and store in the fridge or freezer until you’re ready to cook.
- For the spicy red oil sauce, mix all the sauce components in a small dish.
- To cook the dumplings, bring a large pot of water to a gentle simmer. Boil the dumplings in small batches for a few minutes until fully cooked (allow more time if they are frozen). Drain them and place them in a bowl. Drizzle the spicy red oil sauce over the top and garnish with sesame seeds.
