  • 2 tablespoons (30 ml) tomato paste (30 grams)
  • 1 teaspoon (5 ml) cayenne pepper
  • 4 cups (960 ml) chicken broth (960 milliliters)
  • 1 cup (240 ml) coconut cream (240 milliliters)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons (30 ml) vegetable oil (28 grams)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • Chopped fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, carrot, and celery to the pot.
  3. Sauté the vegetables until softened, about 5 minutes.
  4. Stir in the tomato paste and cayenne pepper, cooking for 1 minute.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the lobster meat to the pot.
  7. Simmer for 15 minutes, allowing flavors to meld.
  8. Remove the pot from heat and carefully blend the mixture until smooth.
  9. Return the pot to the stove over low heat.
  10. Stir in the heavy cream, butter, lemon juice, salt, and black pepper.
  11. Heat gently, stirring occasionally, until warmed through.
