Ingredients
- 8 oz linguine
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the linguine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes; sauté for about 1 minute.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and are cooked through.
- Add the blistered cherry tomatoes and cooked linguine to the skillet. Toss everything together to coat in the sauce.
- Garnish with fresh parsley and serve immediately.
Notes
For added brightness, consider squeezing a bit of lemon juice over the dish before serving. Adjust the spice level to your preference by modifying the amount of red pepper flakes.
