Ingredients

  • 1 pound (454 g) sea scallops (450 grams)
  • 3 tablespoons (45 ml) unsalted butter (45 grams)
  • 4 cloves garlic, minced
  • 1 teaspoon (5 ml) red pepper flakes (5 grams)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 2 tablespoons (30 ml) lemon juice (30 milliliters)
  • 2 tablespoons (30 ml) chopped fresh parsley (8 grams)


Instructions

  1. Pat the sea scallops dry with paper towels.
  2. Season the scallops with salt and freshly ground black pepper.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  4. Add the scallops to the skillet in a single layer.
  5. Sear the scallops for 2-3 minutes on each side until golden brown.
  6. Remove the scallops from the skillet and set aside.
  7. Reduce the heat to medium and add 3 tablespoons of unsalted butter to the skillet.
  8. Once the butter is melted, add the minced garlic and red pepper flakes.
  9. Sauté the garlic and pepper flakes for 1-2 minutes until fragrant.
  10. Stir in 2 tablespoons of lemon juice and mix well.
  11. Return the scallops to the skillet and toss to coat in the sauce.
  12. Cook for another 1-2 minutes until the scallops are fully heated through.
  13. Sprinkle 2 tablespoons of chopped fresh parsley over the scallops.
  14. Remove from heat and serve immediately.
