- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 8 ounces (227 g) linguine (225 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 1 tablespoon (15 ml) Cajun seasoning (15 grams)
- 1 teaspoon (5 ml) paprika (2 grams)
- 1/2 teaspoon (3 ml) garlic powder (1 gram)
- 1/2 teaspoon (3 ml) onion powder (1 gram)
- 1/4 teaspoon (1 ml) cayenne pepper (0.5 gram)
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1/4 teaspoon (1 ml) black pepper (0.5 gram)
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream (240 milliliters)
- 1/2 cup (120 ml) chicken broth (120 milliliters)
- 1/2 cup (120 ml) grated alternative cheese (50 grams)
- 2 tablespoons (30 ml) chopped fresh parsley (8 grams)
Instructions
- Cook the linguine according to package instructions; drain and set aside.
- In a large bowl, combine shrimp with Cajun seasoning, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through; remove shrimp and set aside.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add sliced red and green bell peppers and sliced onion to the skillet.
- Sauté vegetables for about 5 minutes until they are tender.
- Add minced garlic to the skillet and cook for an additional minute.
- Pour in heavy cream and chicken broth, stirring to combine.
- Bring the mixture to a simmer and let it cook for 3-4 minutes until slightly thickened.
- Stir in grated Parmesan cheese until fully melted and the sauce is smooth.
- Return the cooked shrimp to the skillet and mix to coat in the sauce.
- Add the cooked linguine to the skillet and toss to combine with the sauce and shrimp.
- Sprinkle chopped fresh parsley over the pasta before serving.
