Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 8 ounces (227 g) linguine (225 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 1 tablespoon (15 ml) Cajun seasoning (15 grams)
  • 1 teaspoon (5 ml) paprika (2 grams)
  • 1/2 teaspoon (3 ml) garlic powder (1 gram)
  • 1/2 teaspoon (3 ml) onion powder (1 gram)
  • 1/4 teaspoon (1 ml) cayenne pepper (0.5 gram)
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.5 gram)
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream (240 milliliters)
  • 1/2 cup (120 ml) chicken broth (120 milliliters)
  • 1/2 cup (120 ml) grated alternative cheese (50 grams)
  • 2 tablespoons (30 ml) chopped fresh parsley (8 grams)


Instructions

  1. Cook the linguine according to package instructions; drain and set aside.
  2. In a large bowl, combine shrimp with Cajun seasoning, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through; remove shrimp and set aside.
  5. In the same skillet, add the remaining tablespoon of olive oil.
  6. Add sliced red and green bell peppers and sliced onion to the skillet.
  7. Sauté vegetables for about 5 minutes until they are tender.
  8. Add minced garlic to the skillet and cook for an additional minute.
  9. Pour in heavy cream and chicken broth, stirring to combine.
  10. Bring the mixture to a simmer and let it cook for 3-4 minutes until slightly thickened.
  11. Stir in grated Parmesan cheese until fully melted and the sauce is smooth.
  12. Return the cooked shrimp to the skillet and mix to coat in the sauce.
  13. Add the cooked linguine to the skillet and toss to combine with the sauce and shrimp.
  14. Sprinkle chopped fresh parsley over the pasta before serving.
