- 7 garlic cloves (28g), divided
- 1 1/4 pounds (567g) large peeled and deveined raw shrimp, tail-on
- 1/2 cup (120ml) vegetable oil, preferably Spanish, divided
- 1 1/4 teaspoons (6 ml) kosher salt
- 1/2 teaspoon (3 ml) paprika
- 2 tablespoons (30 ml) finely chopped fresh parsley (optional)
- 1 1/2 teaspoons (8 ml) apple cider vinegar

- Infuse flavor into the shrimp: Mince 3 garlic cloves and combine them in a medium bowl with the shrimp, 2 tablespoons of oil, and the salt. Mix until the shrimp are well-coated. Allow this mixture to rest at room temperature for approximately 10 minutes as you continue with the rest of the preparation.
- Prepare the garlic: While the shrimp are marinating, slice the remaining 4 garlic cloves thinly. Warm the remaining oil in a large pan over medium heat. Add the sliced garlic and paprika, stirring occasionally until they start to sizzle and the garlic becomes lightly golden, about 4 to 5 minutes. If the garlic begins to cook too quickly, lower the heat to medium-low, as you want to avoid burning.
- Sauté the shrimp: Introduce the marinated shrimp into the pan along with any juices, then raise the heat to medium-high. Cook, frequently tossing and stirring, until the shrimp turn opaque, roughly 3 minutes. Mix in the parsley, if desired, and the apple cider vinegar, ensuring everything is well-combined. Serve right away with crusty bread to soak up the “sauce.” This dish is best enjoyed fresh, but if you have leftovers, store them in an airtight container in the fridge for up to a day.
