Ingredients
- 1 lb fresh crab meat
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/2 cup finely chopped green onions
- 1/2 cup buttermilk
- 2 large eggs
- Oil for frying
Instructions
- In a mixing bowl, combine flour, cornmeal, baking powder, salt, and cayenne pepper.
- In another bowl, whisk together buttermilk and eggs.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in crab meat and green onions.
- Heat oil in a deep fryer or heavy skillet to 350°F (175°C).
- Drop spoonfuls of the mixture into the hot oil, frying until golden brown, about 3-4 minutes.
- Remove beignets with a slotted spoon and drain on paper towels.
- Serve warm and enjoy.
